The Amadio vineyard at Kersbrook is a huge treasure chest for winemakers to dive into with an array of interesting varieties planted throughout their 300 acre site. We source our Fiano here, where this Italian variety thrives in the warmer, northern part of the Adelaide Hills. The vineyard is so far north, it almost squeezes into the Barossa Valley growing region, and we make sure we have a packed thermos for the drive out there. The Fiano was planted here in 2005 and we pick it when the ripe flavours and acid levels are singing harmoniously. This is usually when a lovely golden hue is developing on the skins, which we keep in contact with the juice for a period of time to build further aromatics, texture and complexity.
