Main & Cherry 2018 Clarendon Shiraz
Single Vineyard - 345M elevation
Handpicked fruit from our vineyard nestled above the Clarendon township. We have been farming this site without any herbicide, insecticide or systemic chemicals for the last few years, and use Indian Runner Ducks to forage undervine, and sheep and alpacas during dormancy to keep the grass down.
Fermented with wild yeast and 20% whole bunches in small fermenters. Foot stomped for the first few days and hand plunged for 16 days on skins, using gentle handling every step of the way. Hand bottled without fining or filtration, after 12 months maturation in French oak.
